Butternut Squash with Pomegranate and Goat Cheese
This dish makes for a perfect seasonal snack or a side dish with a grain such as wheatberries or protein.
Ingredients: Butternut Squash Pomegranates Seeds (I used one pomegranate) Goat cheese crumbles to taste
Instructions: 1. Cut butternut squash into bite sized chunks microwave with water in glass bowl with lid so that it steams.
2. Next drain the water, and transfer butternut squash to a new bowl so it cools. Toss in pomegranate seeds and goat cheese to taste.
