Candied Sweet Potatoes with Pecans + Coconut


Sweet and savory sweet potato casserole is one of my family’s favorites for the holidays. It’s a bit naughty, it’s sweet and nutty what’s not to love and its great compliment to the turkey and stuffing.

Ingredients:

1 sack of sweet potatoes, cleaned chopped and quartered into 1” pieces

2 tablespoons of coconut oil

1/3 cup water

1 cup unsweetened shredded coconut

1 cup pecans

1 tablespoon coconut sugar

2 cups of marshmallows

Instructions:

Preheat oven to 375 degrees F. In a casserole dish massage sweet potatoes with coconut oil and toss with water and bake till sweet potatoes are cooked through about 30 minutes. Take sweet potatoes out of the oven and top with shredded coconut, pecans, coconut sugar, and marshmallows and baked till marshmallows are slightly browned.
