Pear pomegranate Salad
‘Tis the season for fall foods. I’m currently obsessed with pomegranate and pear combo. Not only for its health benefits but for there complex sweet and tart taste. Did you know? Pomegranate is an awesome anti-inflammatory, and has potential anti cancer properties for breast and prostate cancer. While pears flavonoids have been shown to help with type 2 diabetes.
Ingredients:
2 chicken breasts, sliced
1 tablespoon olive oil
Salt to taste
Pepper to taste
1 cup vegetables stock
2 cups arugula
2 cups mixed greens
1 pear, sliced
1/2 cup pomegranate seeds
Goat cheese to taste
Dressing Ingredients:
1 tablespoon olive oil
1 tablespoon lemon juice
Directions:
1. Place vegetables stock in the instapot. Next take the chicken breast and coat them with olive oil salt and pepper. Set to poultry and cook until it has reach the internal temperature of 165 degrees Fahrenheit.
2. Assemble the salad with arugula, mixed greens then pear, pomegranate, and dollops of goat cheese.
3. Whisk together olive oil and lemon juice, drizzle over the salad and serve.
