Caprese Chicken
I love it when you get creativity from food you need to use or it will spoil. I seem to always have these problems with basil, tomatoes, and bananas. And since bananas didn’t play well with the others tomatoes and basil it is! Ingredients: 3 breasts chicken 1-2 tablespoons of olive oil 9 cloves of garlic, smashed (yes I love garlic) A handful of fresh basil, cut chiffonade Salt to taste Pepper to taste 1 1/2 cup of chopped Mozzarella pieces, I used cheese sticks 1 cup of diced cherry tomatoes Preheat the oven to 375. In a glass baking pan drizzle olive oil, and garlic over the chicken, and massage it in. Next season with salt and pepper and toss tomatoes, and half the cheese over top the chicken. Cook until chicken is almost at correct internal temperature of 165 F. Add the rest of the mozzarella and basil. Until the chicken reaches temperature, just a couple minutes. Cheese should be melted and serve. I like to serve this on a bed of salad, with greens, fresh basil, tomatoes, and any other fun veggies you would like to throw in and dress the salad with salt, pepper, balsamic vinegar and olive oil.
