Fajita Tacos


Fajita tacos always hit the spot for dinner. I love them because they are so simple, so tasty and they consist of ingredients I usually have at home.

Ingredients: •olive oil •2 small onions •2 bell peppers •a handful or two of chopped broccoli •organic garlic powder •onion powder

•taco seasoning

•3 chicken breasts •avocados •salt •tortillas

•pepper jack cheese

Cook chicken in the Insta pot on poultry setting with taco seasoning, garlic, and onion powder and a splash of water. Once chicken is cooked and slightly cooled shred with two forks.

While the chicken is cooking heating your cast iron pan over medium, add the olive oil once the pan is hot. Once the oil is warmed, sweat and sauté your onions until translucent, then add peppers and broccoli and sauté until lightly chard. While the veggies cook you can whip up some guacamole by adding organic garlic powder, salt, and tobacco. Mashing it together and set it aside. Shout out to my mother in law for teaching me her guacamole tricks! Once everything is done cooking, take tortillas and top them with pepper jack cheese and stick it in microwave tell the cheese is melted. Then assemble your taco and enjoy!🌮
